About Tartaric Acid

Tartaric acid (C₄H₆O₆) is a naturally occurring organic acid commonly found in grapes and other fruits. It is a key acidulant, contributing to sourness and stability in many products.

Tartaric Acid Uses

Winemaking

Tartaric acid is the primary acidulant used to adjust acidity and pH in must and wine, particularly in warm climate regions where grapes arrive with low natural acidity. Correct pH supports colour, microbial stability, oxidative resistance and the freshness of the finished wine.

Food and Beverage

The acid provides a sharp, clean sourness in confectionery, sherbets, jams, jellies, soft drinks and fruit fillings. It also acts as a chelating agent that binds trace metals, protecting colour and flavour, and it works alongside pectin to support gel set.

Baking

Combined with sodium bicarbonate, tartaric acid forms a fast acting leavening system for baking powders and self raising flour. Its potassium salt, cream of tartar, stabilises whipped egg whites and prevents sugar crystallising in icings, meringues and confectionery syrups.

Pharmaceuticals and Cosmetics

Tartaric acid is used in effervescent tablets and powders, where it reacts with bicarbonate to generate carbon dioxide on dissolution. It also serves as a pH adjuster, chelating agent and mild exfoliating acid in skincare, and in the resolution of chiral pharmaceutical intermediates.
