About Rosemary Extract

Rosemary extract is a plant derived antioxidant obtained from the leaves of Rosmarinus officinalis, an evergreen shrub native to the Mediterranean. It is produced by solvent or supercritical CO₂ extraction, then refined and standardised to a set level of active content. The antioxidant activity comes primarily from the phenolic diterpenes carnosic acid and carnosol, along with rosmarinic acid. Depending on grade it is supplied as an oil soluble liquid, a water dispersible liquid or a free flowing powder, with deodorised and decolourised versions available where the extract must not affect flavour or appearance.

Food and Beverage

Rosemary extract is used as a natural antioxidant that slows oxidation in edible oils, fats, dressings, snack foods and bakery products. It extends shelf life by delaying the development of rancid flavours and odours, and supports clean label reformulation away from synthetic antioxidants.

In fresh, cured, cooked and frozen meat and seafood, the extract protects both colour and flavour through processing and storage. It limits lipid oxidation in high fat products such as sausage and mince, helping retain appearance and eating quality on display.
