About Nisin

Nisin is a naturally occurring antimicrobial peptide produced by the bacterium Lactococcus lactis. It is classified as a bacteriocin and is primarily effective against Gram-positive bacteria. Nisin does not have a fixed chemical formula like simple compounds, as it is a polypeptide composed of 34 amino acid residues. It is commonly available in powdered form and is typically standardised with sodium chloride or other carriers to facilitate ease of use in commercial applications.

Nisin is produced via controlled fermentation of select strains of Lactococcus lactis, followed by purification and drying. Due to its broad-spectrum antimicrobial activity and safety profile, it is widely used in the food industry as a natural preservative.
